Aambila(Odissa Curry)

Ingredients

1/4 cup pumpkin

1/4 cup brinjal

6-7 raddish slices

4-5 bhendis

1 medium tomato

1 ambula(Dried Mango)

Its available in Odissa but not to worry u can add tamarind instead.

2 tsp sugar

1/2 tsp red chilly powder

salt to taste

1 green chilly slitted

chopped coriander leaves for garnishing

For Tempering

1 tsp Pancha Phutana

It is also called as Panch Phoran combination of 5 spices. u can make this by adding

(1 tsp mustard seeds+1 tsp sounf+1 tsp kalonji+1 tsp cumin seeds+1/2 tsp methi)

1 whole red chilly

8-10 curry leaves

2 tsp oil

Procedure

Cur pumpkin , brinjal ,tomato into big thick slices.

Keep bhendi as it is or if u like make it to pieces.

Now heat oil ina pan ,add panch phoran and red chilly.

When mustard seeds start crackle add all vegetables with tomatoes . stir for 2-3 min .

Add sufficeint water n boil it.

Now add salt , turmeric powder ,red chilly powder , ambula(tamarind) to this. boil for 5-8 min.

Now add sugar and cover the lid for 2-3 min.

Garnish with coriander leaves.

Have this with rice and dal.
